just be sure to set the number to something sane or you'll have a stupid amount of camo slots to deal with bloating up your customization menu (and passively eating up performance thanks to how ARC9 works- more slots = more perf hit). I have mine set to 10.

You'll also need to go into the Custom Slot and select the "Camo Support" attachment. It looks like a slice of cake. I suggest picking that one over "More Camos" as you can have all of your camo slots in one place.

ARC9 supports going above 3 camo slots, I don't recall the console command off the top of my head but if you type "find camo" in the developer console you'll find all the console commands that have the word "camo" in it. It's something something max camos, to that effect.

How do you separately colour each part of the gun? I can only get one colour to show up at a time even though I'm using the separate camo slots, not just the first one. I even tried this on that same gun assuming it's from the EFT collection and nothing.

Cerakote is a ceramic coating which is commonly used to color firearms. They can do a lot more than just firearms but that is the biggest thing they pride themselves of.
